Sweet Potato Pad Thai

2 Tbsp Sambal chili paste
1/4 cup hot water
1 Tbsp olive oil
1 bag (10.5 oz) Green Giant™ Fresh Sweet Potato Noodles
1 egg, beaten
1/4 cup green onions, finely chopped
1/2 cup bean sprouts
2 Tbsp dry roasted peanuts, chopped


  1. In small bowl, combine chili paste and water. Set aside.
  2. Meanwhile, in 10” nonstick skillet heat oil over medium heat. Add sweet potato noodles; cook 4-5 minutes or until noodles start to brown. Stir in chili paste and water until well mixed. Cover; reduce heat to low, cook 3-4 minutes or until noodles are tender.
  3. Increase heat to medium-high, stir in egg, onion and bean sprouts. Cook until egg is cooked through. Sprinkle with peanuts.
