Cuban Sandwich

Ingredients

1 cup Green Giant™ Fresh Shredded Brussels Sprouts (from 12 oz bag)
1/4 cup rice wine vinegar
1 1/2 tsp sugar
1 1/2 tsp coarse salt (Kosher)
1 1/2 cups Green Giant™ Fresh Cauliflower Crumbles® chopped vegetable “Fried Rice” Blend
1/2 cup yellow mustard
1 loaf Italian or Ciabatta (roll), cut in half lengthwise
4 oz deli ham, thinly sliced
4 oz deli pork loin, thinly sliced
6 slices Swiss cheese

Directions

  1. In 1-quart saucepan heat 2 cups of water to a boil. Add Brussels sprouts, return to boil. Boil 1 minute, Drain; rinse in cold water.
  2. In small bowl, stir vinegar, sugar and salt until sugar is dissolved. Add Brussels sprouts and Cauliflower Crumbles® chopped vegetable “Fried Rice” Blend, toss until well blended.
  3. Spread mustard on both sides of the bread. Arrange ham, pork and cheese slice on bottom half of the bread slices. Spoon vegetable mixture on top of cheese, tightly pressing down. Top with remaining bread slices.
  4. Heat griddle over medium-high heat. Place sandwich on griddle, cover loosely with foil. Cook 8-10 minutes or until golden brown. Carefully turn sandwich, cook an additional 8-10 minutes or until lightly browned and cheese is melted. Sandwich will be crispy. Cut into slices.
