1 1/2 cups Green Giant™ Fresh Cauliflower Crumbles
1/2 cup butter, melted
1 1/4 cups sugar
3/4 cup unsweetened cocoa powder
1 tsp vanilla extract
1/2 tsp salt
3/4 cup gluten free all-purpose flour
1 tsp baking powder
1 cup mini chocolate chips
1 tsp powdered sugar
1. Heat oven to 350°F. Lightly grease or spray a 9” square pan
2. In bowl of food processor, place cauliflower. Pulse 4-5 times or until mixture is finely chopped. Add eggs and process 30 seconds or until mixture is smooth.
3. Add butter, sugar, cocoa, vanilla and salt. Pulse 2-3 times until combined. Add gluten free flour and baking soda, pulse 1-2 times until just combined. Stir in chocolate chips.
4. Pour into prepared pan. Bake for 30-35 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. Sprinkle with powdered sugar. Cut into 16 squares.
