Eggplants belong to the nightshade family of vegetables, which also includes tomatoes, bell peppers and potatoes. Also known as Aubergine, these vine fruit (yes fruit, not vegetables) grow from hanging vines that can reach several feet in height. Different varieties range slightly in taste and texture, but generally eggplant has a slightly bitter taste and spongy texture.
