Ingredients
3 cups Green Giant® Fresh cauliflowerets (1 pound)
1 cup chopped Green Giant® Fresh mushroomS (4 ounces)
1/2 cup chopped Green Giant® Fresh red onion
1 tablespoon olive or vegetable oil
2 teaspoons lemon juice from a Green Giant® Fresh lemon
2 teaspoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, finely chopped
1/3 cup chopped Green Giant® Fresh green onion
Preparation Directions
1. Heat oven to 350ºF. Spray square baking dish, 9x9x2 inches, with cooking spray.
2. Mix all ingredients except green onions. Spread evenly in baking dish.
3. Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.
